High Protein Blueberry Muffins

Ingredients

  • 4 scoops of Naked Shake Blueberry Muffin 
  • 1 ½ cups almond flour
  • ¾ cup maple syrup 
  • ⅓ cup vegetable oil
  • 3 large eggs
  • ½ cup milk 
  • 2 teaspoons baking powder
  • 1 ½ teaspoons vanilla extract
  • 1 cup frozen blueberries
  • ½ teaspoon of salt

Directions

  1. Preheat the oven to 350º F
  2. In a large bowl mix together almond flour, Naked Shake Blueberry Muffin, baking powder, and salt.
  3. In a separate bowl whisk together maple syrup, vegetable oil, eggs, milk, and vanilla extract. 
  4. Slowly combine the dry mixture into the wet mixture until evenly combined. 
  5. Fold in frozen blueberries.
  6. Divide the batter between 12 lined muffin cups (about ½ full). 
  7. Bake for 20-25 minutes, or until a toothpick comes out clean when poked into the center of one of the muffins.
